Savory Holiday Roasted Acorn Squash for Baby and Family
The hustle and bustle of the holidays is about to begin! I just love the spirit of the holidays and especially the cooking! When it comes to holiday menu planning, there really is no reason to plan a separate holiday menu for your baby. Just look at the menu you have laid out and you will see many options that are baby friendly.
One delicious holiday favorite is acorn squash and as it just so happens, acorn squash makes a great baby food and even is a wonderful first food for baby.
Acorn squash may be prepared savory or sweet and for babies, the way you choose to prepare it is really up to you. If your little one is just beginning to eat solid foods, you may want to shy away from dusting the squash with herbs and spices. You can learn about using herbs and spices in baby’s foods here.
Cutting the squash into slices will enable you to prepare a small portion without spices or herbs, just for your little one, without additional mess or fuss.
- 1 acorn squash
- salish, alder smoked salt - leave this out for babies!
- olive oil
- Preheat the oven to 400F degrees
- Wash the squash and then cut it half
- Scoop out the seeds
- Cut the halves into slices
- Add squash to a baking dish and drizzle with olive oil
- Sprinkle on the herbs & spices, in the amount you prefer - 1/2 tsp each for example.
- Place baking dish in the preheated oven and roast for 40 minutes or longer
- Squash will be finished when it is fork tender, has turned a darker orange-ish color and the shells begin to pucker
Puree as needed to the consistency your baby is enjoying - add other foods such as sweet potato, applesauce or even turkey! Mix in yogurt for a delightfully creamy experience.
Chunk the roasted squash for babies who are enjoying finger foods and feeding themselves.
