Something’s Fishy – Baby Food Recipes

I dug back into our recipe book and pulled this out for dinner.  Babies between 10-12 months should have no troubles with this yummy and healthy fish recipe.  We serve it with brown rice, summer squash and zucchini sauteed in olive oil and garlic, or with green beans and garlic.  For the garlic, use 1/2 or 1 full clove, minced or pressed through a garlic press.  I actually add 2 cloves as the whole family loves garlic – and it’s super healthy too!

Oatmeal Cod

What You Need:
1/2 cup olive oil and 1/2 vegetable oil for frying
1 egg, beaten (or 2 egg yolks if baby cannot have eggs due to allergies or age)
1/3 cup milk
4 Cod fillets
2 tablespoons all-purpose flour for coating
2 cups quick-cooking oats
Garlic powder, paprika, lemon zest and pepper to your taste

Warm oil in a large skillet over medium-high heat. Whisk together egg and milk until a bit frothy then coat the cod fillets with flour; shake off any excess flour!  Add the spices to the Oats.  Dip the cod fillets in the egg mixture then coat cod with the oats.
Fry the cod for approx. 3 minutes on one side then turn over the fillets and fry about 3 minutes more. Drain on paper towels.  Season further to taste if desired.

You may also bake these fish if you prefer.  Bake on an oiled baking sheet (we use olive oil spray or straight olive oil) at 375 F for approx 15-25 minutes depending on the thickness of the cod filets.
